Ingredients (4 people) 

  • 375 gr of beef sirloin
  • 200 gr of mushrooms
  • 75 gr of shallots
  • 60 gr of English mustard
  • 4 slices of ham
  • 250 gr of puff pastry
  • 1 yolk
  • Extra virgin olive oil


Cut the shallots and the mushrooms finely and sauté them in a frying pan with oil. After this, season them and reserve them for later.

Apart, mark the beef sirloin by all its sides (30 seconds per side) with extra virgin olive oil. After letting the sirloin cool down, spread mustard on all its sides. Stretch the sirloin over a plastic wrap and add the shallots and mushrooms mixture. Roll the sirloin with the help of the plastic wrap. Let it cool down in the refrigerator for 25 min, until it takes shape.

Stretch the puff pastry and wrap the sirloin roll carefully, leaving the junction at the bottom. Beat an egg and paint with it the puff pastry wrap surface, with the help of a brush.

Bake it at 200 ºC for 20 minutes, lower the temperature to 180 ºC and let it bake for another 15 minutes.



Cut it into slices and serve it.
