Ingredients (4 people):
– 320 gr of low-loin beef
– 1 natural yogurt
– 5 gr of wasabi in pasta
Begin by marking the meat as a tataki, 15 seconds each side. Once you have done it, cool the meat on water and ice. Dry the meat and cut it into blades.
Yogurt and wasabi sauce
Triturate the yogurt along with the wasabi until it is a bright and thin cream.
Serve the yogurt and wasabi sauce at the base of the dish, then add the tempered beef meat on top of the sauce
