BEEF TARTAR WITH GUACAMOLE

Ingredients (4 people):
Beef tartar:
– 500 g of beef sirloin
– 32 g of pickled gherkin
– 20 g of pickled capers
– 21 g of mustard
– 18 g of yolk
– Salt
– Black pepper
Guacamole:
– 2 units of avocado
– 35 g of chives
– 28 g of grated tomato
– 7 g of lime juice
Toasts:
– Bread loafs

Elaboration
Beef tartar:
Cut the beef sirloin with a knife and dress it with the ingredients. Reserve it cold.
Guacamole:
Chop the avocado and season it with the rest of the ingredients. Reserve it cold.
Toasts:
Bake the bread loafs for one minute at 145ºC.

Finishing
On toast bread, dispose a quenellé: one of beef tartar and another of guacamole. Finish by adding some sprouts.
