MENUDO DE NOCHE – Wonderful Beef

Ingredients (4 people):
– 500 gr of beef calluses
– Beef dried meat
– 2 bay leaves
– Pepper in grain
– 2 onions
– 1 head of garlic
– 2 tablespoons of sweet paprika
– 1/2 liter of white wine
– Food coloring
– Salt
– Pepper
– 250 g chickpeas

Clean the beef calluses and cook them in salted water, along with the bay leaves, for 45 minutes. In a separate pot, poach the finely chopped onion and the garlic and add the cut beef dried meat in tacos. Then add the eppers, calluses and white wine, let it reduce and add the water obtained from the calluses cooking. Add a touch of food coloring and let it cook for 3 hours. After this, add a point of salt and when they are tender, debone and make film balls with them. Strain the resulting sauce from the stew and reserve.

Serve the yogurt and wasabi sauce at the base of the dish, then add the tempered beef meat on top of the sauce.
