BEEF CHEEKS STEWED WITH RED WINE AND MUSHROOMS

Ingredients (4 people):
– 4 beef cheeks
– 800 gr vegetable broth
– 50 gr of olive oil
– 200 gr of red wine
– Black pepper
– Bay leaves
– Salt
– 200 gr of seasonal mushrooms

Elaboration
Clean the nerves of the beef cheeks and fry them a bit in a few drops of olive oil, add red wine until they are covered and let it reduce by half. In that time, add the vegetable broth until they are covered, add the spices and let it cook for two hours. When the beef cheeks are cooked, add finely chopped hazelnuts and cook it for another 5 minutes.

Finishing
Cut the beef cheeks in dices, serve them hot with part of the vegetable broth, and chopped hazelnuts.
