BEEF MEATBALLS

Ingredients (4 people):
Meatballs:
– 1500 g of minced beef meat
– 320 g of poached onion
– 120 g of crustless bread
– 90 g of cream
– 7 eggs
– 35 g of chives
– 180 g of foie gras
– 15 g of salt
– 5 g of black pepper
Sauce:
1st part
– 2 onions
– 1 carrot
– 1 leek
– 5 kg of beef flank
– 5 kg of beef bones
– 8 l of water
– 2 beef hands
2nd part
– 30 g of red curry paste
– 15 g of coriander
– 20 g of basil
– 1 l of coconut milk
– 3 liters of meatball sauce
– 1 lemon gras

Elaboration:
Meatballs:
Mix all the meatball ingredients and let them rest for 6 hours. Once rested, make meatballs of 35 g each.
Sauce:
1st part
Chop the vegetables and brown them in a pot. Add the previously baked bones and flank, then add the water and cook it for 10 hours over low heat. After this time, strain it and reduce until you get a sauce texture.
2nd part
Add all the ingredients in a pot and let them cook for 50 minutes. After this time, strain it and reserve it.

Finishing:
Add the meatballs to the sauce that we have elaborated in the previous step and cook them during 3 minutes, so that the meatball is a bit cooked. After this, it’s ready to be served.
