BEEF BOILER WITH POTATO EMULSION

Ingredients (for 4 people)

Beef boiler

Beef flank

– Garlic

– Green pepper

-Onions

– Chives

– Beans with pod

– Virgin olive oil

– White wine

– Water

– Sweet paprika

– 2 red chilli peppers

Spring onions

Potato emulsion

– 1.200 g of cooked potatoes

– 375 ml of milk

– 75 ml of virgin olive oil

– 10 g of salt

– 10 g of pepper

Elaboration

Beef flank

Cut the beef flank in a rectangular form and add pepper and salt. Introduce this in a vacuum bag and cook it at 65º for 40 minutes. After this time, we cool it quickly and keep it cold until it is used.

Potato foam

Crush the cooked potato, milk, olive oil, salt and pepper in a Thermomix. Introduce the mix in a siphon with three loads of CO2, and keep the siphon charged and ready for frothing.

Beef boiler

On the virgin olive oil, fry the garlic with the beef meat. Then we add the green pepper. After this, add the rest of the vegetables and continue sautéing. Add the paprika and the chilli peppers. Let it cook and then add the water and let it cook until obtaining a cream sauce.

Finishing

Cut the beef flank into individual portions and fry them in hot oil to brown the portion. Once it is hot, place it on a plate and add the vegetables and the stew sauce. Finish adding the potato foam.
