BEEF JERKY CROQUETTES WITH MARROW AND SEMICURATED BEEF LOIN BEARNAISE SAUCE

Ingredients (4 people)

Croquettes filling

  • 582 g of chopped onion
  • 750 g of butter
  • 1 kg of flour
  • 3,5 l of beef broth
  • 2 l of milk
  • 500 g of beef jerky
  • 250 g of beef marrow
  • Salt
  • Pepper
  • Panko

Semicurated beef loin

  • 1 kg of fine salt
  • 1 kg of smoked salt
  • 1 kg of beef loin

ELABORATION

Croquettes

Melt the butter and brown the onion for 30 minutes. Then add the flour and brown it. Then, moisten it with the beef broth and the milk and work the dough until it is homogeneous.

After this, add the chopped beef jerky and the chopped beef marrow. Add a bit of salt and pepper and save it in the fridge for 12 hours.

Then, roll the croquettes and roll them in flour, eggs and panko. Fry the croquettes at 180ÂșC.

Semicurated beef loin

Clean the nerves and the excess of fat from the beef loin and wrap the loin in the salt mixture. Let it rest in the salt for 2 hours and then wash the loin and reserve it vacuum packed.

Once it has rested, cut it into fine shavings.

FINISHING

Fry the croquette and then put a slice of semicured beef loin on top. Finish painting the loin with the melted grass and a chive flower.
