CARPACCIO OF BEEF STRIPLOIN WITH DRIED FRUITS DRESSING

Ingredients (4 people)

  • 300 gr of beef striploin
  • Micromezclum.
  • Maldon Salt
  • Pepper

Pine nut oil

  • 110 g jerk
  • 110 g ham
  • 300 g sundflower oil
  • 20 g boletus powder

Marinated crusty bread

  • One piece of country style bread
  • 100 g butter
  • Thyme
  • Rosemary
  • 4 garlic cloves
  • 1 bay leaf
  • Salt
  • Pepper
  • Extra virgin olive oil

Elaboration

To prepare the pine nut oil, grind all the ingredients using a Thermomix, strain them and place the mix in a small feeding bottle.

The first steep to make the crusty bread is melting the butter in a frying pan and adding all the aromatic plants. Once the butter is noisette, add the crumbled country style bread to the pan and fry it. After that, dry the bread in an oven at low-temperature and let it cold. Lastly, grind in a blender until making dust bread.

Then, clean the beef striploin and wrap it tight with film, making a cylindrical form with it. Next, freeze the roller so that it acquires the desired shape. Afterwards, cut the roller into thin slices with a meat slicer and place over the parchment paper. Set aside.

Finishing

To serve, put a slice of striploin in a plate. Add a little bit of pine nut oil and the dust bread. After that, season to taste.
