MARINATED BEEF FLANK SKIRT

Ingredients (4 people)

  • 500 gr of beef flank skirt
  • Curry marinade
  • Smoked olive oil
  • Maldon salt
  • Micromezclum

Curry marinade:

  • 10 g Bird Chili
  • 70 ml wine vinegar
  • 10 g garlic
  • 40 cl coconut milk
  • 2 cumin spoons
  • 10 clove units
  • 4 cinnamon stick
  • 2 spoons of pepper
  • 2 spoons of star anise
  • 1 old style mustard
  • 3 spoons of curry
  • 10 cardamon pods
  • 4 vanilla beans

Elaboration

To prepare the curry marinade grind all the ingredients and stand them for 24 hours. After that, strain the mix using a fine mesh strainer.

In a pan or grill sear the beef and season it with the curry marinade. Leave to stand.

Finishing

Before serving it, sear the beef again in a grill and add a bit of maldon salt and the smoked oil.

Finish the recipe decorating the dish with a bit micromezclum.
