– 1 kg bull’s tail
– 2 liters red wine
– 1 glass amontillado
– 1 onion
– 1 shallots
– 2 carrots
– 4 mushrooms
– ½ head of garlic
– 2 bay leaves
– peppercorns
– olive oil
– salt
