Ingredients (4 people)
– 250 gr of fresh Colmenillas.
– 100 gr of foie
– 2 shallots.
– 2 dl of beef broth.
– 1/2 dl of white wine
– 1/2 dl of liquid cream.
– 25 grams of butter.
– 150 gr of low loin.
Begin by thoroughly washing the morels in cold water and separate the head from the stem. Finely chop the shallot and sauté with a little butter. Add the shallots so that they mix well and finish adding the white wine and the meat broth. Let it reduce.
