SALMOREJO WITH BEEF JERKY AND CODORNIZ EGGS

Ingredients (4 people)

Beef jerky
– 375 gr of tomato pear
– 16 gr of extra virgin olive oil
– 16 gr of oil 0.4
-1/2 clove of garlic
– 40 gr of cateto bread (rustic bread)
– Jerez vinager
– 2 boiled quail eggs

Elaboration

Start by mashing tomatoes, garlic, salt and virgin olive oil at 50 ยบ C for 5 minutes.
Then add the bread and oil 0.4 slowly to emulsify. Once this mixture is made, add a point of salt and Jerez vinager and allow to cool.

Finishing

Fill a glass and finish with beef jerky and half boiled quail egg.
