ROAST BEEF

Roast Beef Recipe

Ingredients (4 people):

For the sirloin:

– 300 ml extra virgin olive oil
– 500 g beef sirloin
– Black pepper
– Salt
– Croutons
– Fennel sprouts
– Mayonnaise

For the Soy Marinade:

– 30 g lard
– 3 garlic cloves
– 15 ml soy sauce
– 15 ml beef demi-glace

ELABORATION

Sirloin:

Clean the sirloin and season it. After that, sear the beef in a pan with the olive oil. Then, remove the beef from the heat and place it in an oven tray. Bake the beef at 200 Celsius degrees for around 30 minutes – until it is well baked. Remove the meat from the oven, let it cool and freeze it.

Marinade:

Fry the garlic cloves in the lard without burning them, remove the pan from the heat and low the temperature. Then, add the soy sauce. Cook over medium heat and add the demi-glace. Season it to taste and let it cool.

FINISHING

With the sirloin still frozen, cut three thin slices and put them on a plate. Then, sauce the sirloin with the soy marinade and garnish it with a bit mayonnaise, the croutons and some fennel sprouts. Finish the dish by adding maldon salt.
