Beef Ragu Recipe

Ingredients (4 people):

– Extra virgin olive oil
– 4 pieces of beef cheeks
– 3 crushed garlic cloves
– 2 carrots
– 2 onions
– 1 bouquet garni
– 2 tomatoes
– 1 bottle of red wine
– 50 g of armagnac

Elaboration:

Clean and season the beef cheeks. After that, cover the bottom of a pot with olive oil and fry the meat. Then, take the pot from the heat and remove excess oil. Next, stir-fry the vegetables and the tomatoes. Add the beef cheeks and the Armagnac and flambé the meat. Add the red wine pre-heated and simmer on low until the beef cheeks are done.

Set the beef aside and pass the beef juice through a cheesecloth. Then, reduce the sauce by three quarters in a small pot.

Finishing:

Put the beef cheeks on a plate and sauce it. Serve with fries.
