WHITE VEAL STEAK OVER BARBECUE SAUCE

WHITE VEAL STEAK OVER BARBECUE SAUCE AND VIERGE SAUCE

Ingredients (4 people):

Dressing:
– 4 gr of sweet paprika
– 1 gr of spicy paprika
– 1 gr of doka
– 40 ml of white wine
– 40 ml of extra virgin olive oil

Barbecue sauce:

– 8 ml of oil
– 4 gr of butter
– 1 gr of spicy paprika
– 4 gr of chopped onion
– 3 ml of bourbon
– 8 gr of fried tomato
– 3 ml of honey
– 3 ml of Perrins sauce
– 3 gr of sugar
– 1.5 ml of lemon juice
– 6 ml of orange juice
– 3 ml of citrus vinegar

Vierge sauce:

– 4 ml of extra virgin olive oil
– 12 gr of tomato in brunoises
– 1 gr of finely chopped garlic
– 2 gr of parsley
– 2 gr of cilantro
– 1 g of sage
– 1.5 gr of chopped basil
– 2 ml of white wine vinegar
– 0.5 gr of soy

Elaboration:

Steak:

Sprinkle the steak with salt and pepper and vacuum it with the marinade ingredients. Let it macerate in cold until its use.

Dressing:

Mix the sweet and spicy paprika with the doka, the white wine and the virgin olive oil.

Barbecue sauce:

First, stuff the onion with the oil and butter. Add the paprika and bourbon. Reduce the alcohol and add sugar and honey. Homogenize and add the fried tomato. Let it reduce for a few moments before adding the lemon juice, orange juice and citrus vinegar. Finally, let it reduce and wait for the sauce to thicken.

Vierge sauce:

Mix all the ingredients and mix them.

Finishing:

Put the steak in the oven. When the steak is roasted, carve it. Add the barbecue sauce to the plate and place the beef steak on top of it.
