


Beff Meatballs garnished with coriander sprouts recipe
Ingredients (4 people)
Meatballs
– 1 kg. of minced beef (preferably tenderloin)
– garlic bulb
– 8 eggs
– ½ kg. of breadcrumb
– Salt
– Pepper
Beaf sauce
– ½ kg. of beef bones
– 1 pork ear
– 1 pork cheek
– 1 chicken
– 1 Iberian rib
– 3 onions
– 1 head of garlic
– 4 carrots
– 4 leeks
– 1 l. of red wine
– 4 l. of water
Elaboration
First of all, mix all the ingredients of the meatballs in a bowl and leave to marinate for around 12 hours in the fridge. Then, make little balls and set aside.
To elaborate the beef sauce, roast the bones, the ear, the pork cheek and the chicken in the oven. In a big pot, roast the vegetables and, once they are done, add the ingredients from the oven, sauté them and pour the red wine until halved. Cover with water and let it reduce, then, strain.
Fry slightly the beef meatballs and add them to the pot with the beef sauce, wait until they are tender and the sauce is smooth enough to cover the beef meatballs.
Finishing
To finish, serve the beef meatballs in a plate with a bunch of coriander sprouts.
