Beef Golden Coin Cassoulet recipe
Ingredients (4 people):
400 gr of white beans
200 gr of beef golden coin
1 tbsp of beef fat
200 gr of tomato sauce
1 tbsp of flour
2 ladles of vegetable broth
100 gr of beef botifarra
1 bouquet garni of thyme, bay and parsley
7 garlic cloves
First of all, cut the beef in thin strips. Then, brown it in a mud casserole using the beef fat. Once the meat is well browned, add the carrots, the garlic cloves, the boiled bacon, half ladle of the vegetables broth, the tomato sauce, the bouquet garni of thyme, bay and parsley, the flour and salt and pepper to taste. Let it simmer. When the meat is half cooked, add the white beans, stirring constantly. Make sure that the broth fully covers the meat.
Then, cut the botifarra into pieces.
To finish the dish, remove the casserole from heat, add the botifarra, cover it and place it in a preheated oven at 180-190 ºC for around 15 minutes.
