


Stewed beef shin with horseradish foam recipe
Ingredients (4 people)
For the Beef Shin:
– 1 kg of beef shin
– Onion
– Ground pepper
– 1 head of garlic
– Bay
– Sweet paprika
– Fresh parsley
– Extra virgin olive oil
– Red wine
For the Spicy Beet Sauce:
– 100 g of red onion
– 20 g of red chili
– 20 g of green chili
– 40 g of tree tomatoes
– 40 g of green tomatillo
– 30 g of chopped coriander
– 5 g of salt
– 100 g of avocado oil
– 300 g of roasted beet
For the horseradish foam:
– 1.2 kg of boiled potatoes
– 375 g of milk
– 75 g of virgin olive oil
– 10 g of salt and pepper
– 10 g of horseradish
Elaboration:
First of all, remove the fat and tendons from the beef shin and season it with salt and pepper. Then, cut the onion, pepper and garlic and wrap the beef with them and with the aromatic herbs.
When everything is well mixed, put the beef in a big vacuum bag and cook it in a roner oven at 80 ºC for 24 hours. Keep it in the fridge.
To prepare the spicy beet sauce, mix all the ingredients and set aside in a cool place.
For the horseradish foam, grind all the ingredients and pour them into a siphon with 3 charges, keep it warm and ready to use.
Finishing
To finish the dish, pour some meat sauce in the center of a plate and place the beef shin over it.
Then, pour a bit horseradish foam and the spicy beet sauce over the meat.
