ROASTED BEEF FLANK WITH SALSA BRAVA AND WILD HERBS MINCE

Roasted Beef Flank with Salsa Brava and Wild Herbs Mince recipe

Ingredients (4 people)

For the Beef Flank:

– 1 kg of beef flank

– Parsley

– Celery leaves

– Coriander

– Wild herbs

– Chive

 

For the Salsa Brava:

– 4 garlic cloves

– 150 ml of extra virgin olive oil

– 80 g of cornflour

– 100 ml of fino wine

– 5 gr of hot paprika

– 150 gr of red pear tomato

– ½ cayenne pepper

– 1 l of water

 

Elaboration:

Firstly, remove the fat and tendons from the beef flank and cut it into 4 pieces, season it and place it into a big vacuum bag. Boil the beef at 80 ºC for 12 hours. Then, allow to cool. Remove from the vacuum bag, divide it into portions and reserve in cool temperature.

To prepare the salsa brava, stew the garlic and cayenne pepper with a stream of olive oil, until browned. Then, stir-fry the chopped tomato and add the sweet paprika. After that, put in the cornflour, mix thoroughly and add the wine. Let the alcohol evaporate and pour the water. Cook until it becomes a light cream, then pass it through the Thermomix at 5ª speed and 50 ºC, strain and set aside.

 

Finishing

Grill the beef flank, coat it with the salsa brava and sprinkle the aromatic herbs over it. Once the meat is browned and ready, carve it. Serve it in a wooden board.
