Beef stew recipe

Ingredients (4 people)

  • 600 gr of beef shin
  • 1 onion
  • 2 garlic cloves
  • 1 leek
  • 1 carrot
  • ½ l of red wine
  • 1 tomato
  • 1 spoon of flavour
  • Black pepper
  • 8-10 mushrooms

For the picada:

  • 8 raw almonds
  • 1 garlic clove
  • Saffron
  • Parsley

 

Elaboration:

Season the beef with salt and pepper and fry it until browned. Set aside.

 

Then add the leek, the garlic, the tomato, the diced carrot, the green pepper finely chopped and a dash of olive oil.

 

Once the vegetables start to brown, add the beef and black pepper and fry it. Then, add a spoon of flavour, mix it and pour the red wine. Let the alcohol evaporate and cover it with water. Stew it on a low heat.

 

To prepare the picada, crush the saffron, the garlic, the almonds and the parsley finely chopped, dilute the mixture with water and pour it into the stew. Let the meat cook until softened.

 

In a different frying pan, sauté the mushrooms with some olive oil. Then, add them to the stew and let it cook for 5 more minutes.

 

Finishing

Serve it in a soup plate and garnish the dish with some parsley leaves.
