Beef cheek ravioli with mashed potatoes recipe

Ingredients (4 people)

For the beef:

  • 1 kg of beef cheeks
  • 1 big onion
  • 4 cloves of garlic
  • 1 carrot
  • 1 celery
  • 1 bay leaf

For the mashed potatoes:

  • 500 gr of baked potatoes
  • 350 gr of butter
  • 100 gr of milk
  • 50 gr of cream
  • Salt

 

Elaboration:

First of all, sear the beef checks and set aside. Then, brown the vegetables along with the aromatic herbs, pour some water and chicken broth and cook it in a pressure cooker for 40 minutes. After that, strain it, set aside the beef and the vegetables, reduce the sauce and thicken it with butter. Place the beef in the pot and cook it for 5 minutes. Allow to cool.

 

Put the potatoes through a blender, then, add the butter and the milk. Thicken the mixture with extra virgin olive oil.

 

After that, put some water to boil with a dash of olive oil and salt. Add the ravioli foils and stop the boiling with cold water and ice.

 

Finishing

Dry the ravioli foils, add the beef preparation and close the ravioli. Serve it in a plate with a bit sauce.
