Online Masterclass successfully celebrated

The Spanish beef association (Provacuno) continues with its promotional campaign of the European Beef around the world. This time, the target audience were the future chefs, that is, young students who are preparing themselves in prestigious culinary schools.

 

Due to the current mobility restrictions that we are passing through in these days, the format of the master classes were carried out in live streaming from Spain to the following schools:

 

  • PCCA – Culinary Arts – Jeddah (Saudy Arabia)
  • The Food and Wine Academy School of Hotel and Tourism Management (Hong Kong)
  • A Au Vagu Corp (Vietnam)

 

 

From Spain, the Michelin starred Chef Javier Aranda (1 Michelin star) conducted the masterclass from its Restaurant “Gaitan” where prepared some recipes with the best European beef. Moreover, he also provided some tips to get the most out this wonderful beef in their cuisines.

Virtual European Beef Fair exclusive for Vietnam

The Spanish beef association (PROVACUNO) organizes next November 24th a virtual trade show for all Vietnamese companies interested in European Beef

 

The world is changing so does international relations. Due to the impossibility of organizing massive face to face events such as international trade shows, PROVACUNO has decided to organize a virtual edition exclusively for European beef sector and companies from Vietnam. The event will start on November 24th and will last 3 days. During these three days (24th,25th and 26th) Vietnamese companies may freely enter to the virtual trade show (between 14pm-20pm) and interact with Spanish/European beef professionals.

 

The event aims to strengthen business relationships between beef sector of Spain/Europe and Vietnam. To achieve it, there will be crew of professionals willing to assist all the attenders. Moreover visitor may watch useful keynote presentations on demand or video recipes by Michelin starred chefs among others.

Great success of the online activities carried out to promote the European Beef in Saudi Arabia

 

After the success of the first online activities carried out in June for the market of Hong Kong, Provacuno – the Spanish Beef Organization – has organized another webinar and b2b event, this time, for Saudi Arabia.

 

This way, the Interprofessional is continuing the promotion of the European beef around the world, adapting its activities to our new reality and giving visibility to the EU products, quality and security.

 

The first activity carried out was webinar on which, Mr. Jose Ramón Godoy – Director of the International Department of Provacuno, – introduced the main features of the European beef to the key players in the sector, such as importers, distributors and professionals of the food industry.

 

Besides, the 2 days after the webinar, Mr. Godoy held several meetings with beef importers through a virtual platform. By doing so, Provacuno had the chance to talk to some of the key importers of the country, which are considered indispensable to position the European beef in the Saudi market and to raise awareness about the quality and distinctive features of our products.

 

These online activities are part of the three years’ campaign What a Wonderful European Beef!”, aimed at raising the European beef exports to the Kingdom and increase the presence of the European beef worldwide.

We had the honor that the Michelin star Chef Javier Estévez from the restaurant “La Tasquería” in Madrid teaches us how to prepare Callos (Tripe Spanish Style) using the best European beef.

 

Provacuno – Spanish Beef Association shows in Dubai the European Beef origin with Star Michelin Chefs

 

As part of the program ‘What a Wonderful Beef’ sponsored by the European Union, Provacuno has been organizing and hosting several high profile events in the last years to create awareness about Europe as one of the best origins for the highest quality Beef products.

 

Backed by the European Union, Provacuno is resuming its international promotion activities after the COVID-19 restrictions, choosing Dubai and the UAE one more time to organize this event with the Michelin Star chefs Juanlu Fernández and Fernando del Cerro. They will be showing the European Gastronomy based in the freshness and authenticity of its products.

 

The cocktail dinner targeted at media, local distributors and importers among others, will be served at the Dukes Hotel (Royal Hideaway) the Palm, Dubai, next September 9th at 19:30, where the representative of Provacuno, Mr. José Ramón Godoy, will be explaining some of the characteristics and uniqueness of the European beef as its superior nutritional values and highest recognized quality based in the grain and legumes feeding system.

 

Currently, the beef meat volumes exported from Spain to the UAE in 2019 started to show an important evolution. Until August 2020 and despite the COVID -19 crisis, they have reached 30 tons of the highest quality cuts which shows that the demand is being positively impacted by a better knowledge of the products by the consumers.

 

Beef cheek ravioli with mashed potatoes recipe

Ingredients (4 people)

For the beef:

  • 1 kg of beef cheeks
  • 1 big onion
  • 4 cloves of garlic
  • 1 carrot
  • 1 celery
  • 1 bay leaf

For the mashed potatoes:

  • 500 gr of baked potatoes
  • 350 gr of butter
  • 100 gr of milk
  • 50 gr of cream
  • Salt

 

Elaboration:

First of all, sear the beef checks and set aside. Then, brown the vegetables along with the aromatic herbs, pour some water and chicken broth and cook it in a pressure cooker for 40 minutes. After that, strain it, set aside the beef and the vegetables, reduce the sauce and thicken it with butter. Place the beef in the pot and cook it for 5 minutes. Allow to cool.

 

Put the potatoes through a blender, then, add the butter and the milk. Thicken the mixture with extra virgin olive oil.

 

After that, put some water to boil with a dash of olive oil and salt. Add the ravioli foils and stop the boiling with cold water and ice.

 

Finishing

Dry the ravioli foils, add the beef preparation and close the ravioli. Serve it in a plate with a bit sauce.

Beef stew

Beef stew recipe

Ingredients (4 people)

  • 600 gr of beef shin
  • 1 onion
  • 2 garlic cloves
  • 1 leek
  • 1 carrot
  • ½ l of red wine
  • 1 tomato
  • 1 spoon of flavour
  • Black pepper
  • 8-10 mushrooms

For the picada:

  • 8 raw almonds
  • 1 garlic clove
  • Saffron
  • Parsley

 

Elaboration:

Season the beef with salt and pepper and fry it until browned. Set aside.

 

Then add the leek, the garlic, the tomato, the diced carrot, the green pepper finely chopped and a dash of olive oil.

 

Once the vegetables start to brown, add the beef and black pepper and fry it. Then, add a spoon of flavour, mix it and pour the red wine. Let the alcohol evaporate and cover it with water. Stew it on a low heat.

 

To prepare the picada, crush the saffron, the garlic, the almonds and the parsley finely chopped, dilute the mixture with water and pour it into the stew. Let the meat cook until softened.

 

In a different frying pan, sauté the mushrooms with some olive oil. Then, add them to the stew and let it cook for 5 more minutes.

 

Finishing

Serve it in a soup plate and garnish the dish with some parsley leaves.

Beef liver with onion

Beef liver with onion recipe

Ingredients (4 people)

  • 1 kg of beef liver
  • 3 big onions
  • 1 clove of garlic
  • White wine
  • 3 bay leaves
  • Oregano
  • Black pepper
  • Salt
  • Extra Virgin Olive Oil

 

Elaboration:

First, cut the onions into thin strips and chop the garlic. Fry them in a frying pan with a dash of olive oil. Dice the beef liver and add salt and pepper.

 

Once the onions are ready, add the beef, the bay leaves and oregano. Leave on a low heat and stir from time to time.

 

When the beef liver has changed its colour, pour some wine. Doing that will soften the beef, enhancing the dish flavour.

 

Leave on a low heat for 15-20 minutes until the alcohol has evaporated.

 

Finishing

Place the beef liver in a plate along with French fries or baked potatoes and enjoy it!
