To prepare the parmentier, wash and cook the whole potatoes. Once done, place all the ingredients of the foam in a food processor and crush them at 60 ºC for 4 minutes. At the same time, pour the olive oil little by little. Then, put the elaboration in a whipping siphon and set aside.
In order to elaborate the poke sauce, using the sesame oil, stir fry the garlic cloves and once they are ready add the chili pepper and after that, the mirin and the soy sauce. Grind the mix and set aside.
Sear the beef striploin and leave to stand for a while, then, add salt and pepper. Sauté the vegetables and add the poke sauce.
Plating:
In a shallow dish put the potato foam. Next to it place the beef striploin sliced along with the vegetables. Finish the dish with a drop of olive oil and the flowers and herbs.
