INGREDIENTS

• 15 pcs Wonton pasta
• 500 gr beef shank
• 500 gr beef skirt steak
• 50 gr vegetable oil
• 1 lemongrass stem
• 4 cloves of garlic
• 1 onion
• 50 gr tomato paste
• 500 ml coconut milk
• 1 l water
• 1 pcs of star anise
• 5 gr of Chinese five spice
• 2 carrots
• 10 ml soy sauce
• 5 leaves of Thai basil
• Coriander leaves

Ragu ravioli Bo Kho style

Elaboration

Sauté the garlic and the lemon grass in the oil for one minute.
Add the meat, the carrots and the chopped onion.
Then, add the tomato paste and cook for five minutes.
Next, add the water, the coconut milk, the star anise and the Chinese five spice.
Leave the mix to boil on a medium low heat for one and half hours.
Add the soy sauce and remove the star anise.
Dice the meat and make raviolis with the Wonton pasta.
Strain the broth and reduce until it reaches the consistency of a thick soup.

Termination

Heat the steamed ravioli and place them on the plate, sauce with the reduced broth and finish with Thai basil leaves and coriander leaves.
